Refrigerated ready-to-eat TCS food prepared on site and held more than 24 hours is clearly marked with the date or day by which it must be eaten, sold or discarded, no more than 7 days at 5°C (41°F) or less counting the day of preparation as day 1 (Pf); commercially processed ready-to-eat TCS food is marked when opened and held more than 24 hours, counting opening as day 1, without exceeding a safety-based manufacturer use-by date (Pf); combined foods keep the date of the earliest ingredient (Pf). Marking may use approved methods for frequently rewrapped items or dispensers, preparation or opening dates with a discard procedure, or calendar dates, days, colour codes or other disclosed systems. Exempt are individual portions from bulk at consumer request, shellstock, and certain plant-made items once opened (deli salads under 21 CFR 117, hard and semi-soft cheeses, cultured dairy, preserved fish, shelf stable fermented sausage and salt-cured products). Food past its time, undated, or marked beyond the limit is discarded (P), and vended ready-to-eat TCS food with automatic shutoff is discarded when the limit is exceeded (P).
