TCS food is thawed under refrigeration at 5°C (41°F) or less (Pf); fully submerged under running water at 21°C (70°F) or below with enough flow to float off particles, without thawed ready-to-eat portions rising above 5°C or raw animal food exceeding 5°C for more than 4 hours in total (Pf); as part of cooking, or in a microwave with immediate transfer to cooking (Pf); or by any method for a portion of ready-to-eat food thawed for an individual order. Reduced oxygen packaged fish labeled keep frozen is removed from its package before refrigerated thawing, or before or immediately after running water thawing (Pf).
