Displayed food (other than nuts in shells and whole produce for consumer peeling or washing) is protected by packaging, food guards, display cases or other effective means (P). Condiments are protected in dispensers, protected displays with utensils, dispensing original containers or individual portions, and at vending locations are packaged or filled at an approved place. Raw unpackaged animal food is not offered for self-service (P), except ready-to-eat items such as sushi or raw shellfish on buffets, ready-to-cook portions cooked on the premises (Mongolian barbecue) and raw frozen shell-on shrimp or lobster; self-service of ready-to-eat food has suitable utensils or dispensing (Pf) and is monitored by trained food employees (Pf). Food returned or unused after being in a consumer's possession is not re-served (P), except non-TCS food in closed dispensing containers (such as narrow-neck bottles of catsup) or unopened original packages in sound condition.
