TQCSI HACCP Code:2024 5.2: Flow diagram

What does 5.2 require?

Every process step in the operation that might attract a food safety hazard is identified in a flow diagram, and the HACCP team validates the diagram to confirm that all relevant steps are captured. Diagrams should show the sequence and interaction of steps, the entry points of inputs (raw materials, ingredients, aids, packaging, utilities, intermediates), any outsourced processes, where rework and recycling happen and the exit points of end products, intermediates, waste and by-products; the team walks the process against the chart before hazards are identified.

What else in your programme already covers this

This control maps to 2 controls across 1 other frameworks. If you already hold one of them, the evidence you collected for it is the starting point here rather than new work.

  • 19.4 19.4 Step 4: Construct the flow diagram
  • 19.5 19.5 Step 5: On-site confirmation of the flow diagram

Every mapping shown was judged rather than inferred from wording similarity, and the ones that failed review are published too. See the coverage reports and what was rejected.
