SQF Code Edition 9 - Safe Quality Food 11.6.5: Loading, Transport, and Unloading Practices

What does 11.6.5 require?

Loading, transport and unloading practices are documented, implemented and designed to keep proper storage conditions and product integrity and to stop cross-contamination occurring (11.6.5.1). Vehicles used on and from the site are inspected before loading for cleanliness, repair, suitability and absence of odours or other adverse conditions (11.6.5.2) and secured against tampering with seals or other agreed devices (11.6.5.3). Docks protect product during loading and unloading, and loading minimises exposure harmful to product and package integrity (11.6.5.4). Refrigerated units hold product at the required temperature, with the set point entered, checked and logged ahead of loading and product temperatures noted periodically while loading, where applicable (11.6.5.5); units run at all times, with operation, door seals and storage temperature checked at intervals in transit (11.6.5.6). On arrival, before doors open, the unit's set point and actual running temperature are checked and logged, unloading proceeds without delay, and product temperature is logged when unloading begins and periodically during it (11.6.5.7), and unloading minimises harmful exposure (11.6.5.8).
