Floors are smooth, dense, impact-resistant, impervious, easy to clean and sloped to drains so all overflow and wastewater are removed, with plumbed alternatives where there are no floor drains (11.1.2.1); drains are easy to clean and not a hazard (11.1.2.2); waste trap systems are away from food handling areas and entrances (11.1.2.3). Internal walls, partitions, ceilings and doors are durable with even, impervious, light-coloured internal surfaces kept clean, and wall-wall and wall-floor junctions are cleanable and sealed against debris (11.1.2.4). Pipework, ducts and conduit that carry product, ingredients, steam, water or other services prevent contamination and are easy to clean, backed by a risk analysis (11.1.2.5); pipes carrying sanitary waste or wastewater directly over product lines or storage prevent contamination and are cleanable, also with a risk analysis (11.1.2.6). Doors, hatches and windows in food areas meet the wall requirements, doors and hatches are solid and windows shatterproof (11.1.2.7). Product is handled under a ceiling or other structure that prevents contamination, and drop ceilings allow pest monitoring, cleaning and access to utilities (11.1.2.8). Platforms, catwalks and stairs do not create contamination risk, have no open grates above exposed product and are kept clean (11.1.2.9).
