Section 9: Establishment, design of facilities and equipment – Codex General Principles of Food Hygiene (CXC 1-1969, Rev. 2022)

Codex General Principles of Food Hygiene (CXC 1-1969, Rev. 2022) 9.2.6: 9.2.6 Lighting

Natural or artificial lighting lets the business operate hygienically, with intensity suited to the operation, and does not impair detection of food defects or contaminants or inspection of facilities and equipment for cleanliness. Where appropriate, light fittings are protected so breakages cannot contaminate food.
