BRCGS Global Standard for Food Safety Issue 9 8.5.2: Microbiological limits for cleaning performance in high-risk and high-care zones with corrective action

What does 8.5.2 require?

For zones classed high-risk or high-care, the site must set microbiological limits that separate acceptable cleaning from unacceptable cleaning against the relevant hazards, measured by visual, ATP, microbiological or chemical methods. Corrective action must be defined for results outside the limits, and cleaning procedures that control a specific hazard must be validated.
