The site must test its traceability across its product groups, tracing from supplier to finished product and back again. The test includes a quantity check or mass balance covering food raw materials, finished products, and printed packaging and labels that carry safety or legal information, and records a summary of the documents used and how they link. Testing happens at least once a year and the results are kept; traceability should be possible to complete within 4 hours.
