BRCGS Global Standard for Food Safety Issue 9 2.9.1: Critical limits defined for each CCP, measurable or supported by clear guidance

What does 2.9.1 require?

Each CCP must have suitable critical limits that show plainly whether the process is under control or not. Limits must be measurable wherever possible (for example time, temperature or pH), and where a measure is subjective it must be backed by clear guidance or examples such as photographs.
