A food handler takes all reasonable measures not to handle food, or surfaces likely to come into contact with food, in a way likely to compromise the safety and suitability of the food. This Subdivision 1 duty binds the food handler personally (Standard 3.1.1 clause 4(2)); the business informs handlers of it under clause 18(1).
