A restaurant or similar retail food establishment belonging to a chain of 20 or more outlets trading under one name and offering substantially the same menu items must show the calorie count of each standard menu item on menus and menu boards adjacent to the item in type at least as large as the item's name or price, with the succinct statement on daily caloric intake ('2,000 calories a day is used for general nutrition advice, but calorie needs vary'), the statement that written nutrition information is available on request, and that written information (total calories, total fat, saturated fat, trans fat, cholesterol, sodium, total carbohydrate, fiber, sugars and protein) available on the premises. Calories for self-service foods and foods on display must be posted on signs adjacent to the item. Declarations must have a reasonable basis (nutrient databases, cookbooks, laboratory analyses) and the establishment must keep records of the basis and certify on request. Establishments not covered may voluntarily register to be covered.
