Clear and concise requirements are given when buying product that affects food safety; only preservatives, processing aids and additives approved by the relevant legislative authority are used, and only for their approved purpose; and suppliers are chosen on whether they can deliver what the contract demands, including any quality assurance or food safety conditions. Where purchasing documents cannot practically be sent to the supplier, in-house records of orders and goods received are kept. Suppliers are evaluated initially, kept on an approved or preferred supplier list that is reviewed from time to time (considering labelling matters such as allergens and GM ingredients), and the list is available to staff who order goods.
