Personnel known to carry infectious diseases that pose a health risk to others through packing or storage stay away from processing and packing and from any store where food is open (11.3.1.1). Measures prevent materials, ingredients, packaging, food or contact surfaces from contamination by blood or other body fluids, wounds, sneezes, coughs, spit or any other route, and after an injury spilling bodily fluid a trained person makes sure affected areas are cleaned and materials and products quarantined or disposed of (11.3.1.2). People with exposed cuts, sores or lesions do not handle exposed product or primary packaging or touch contact surfaces, and minor cuts on exposed skin are dressed with a brightly coloured plaster that a metal detector can find, or another coloured waterproof dressing (11.3.1.3).
