Hazards are analysed in line with the seven HACCP principles and twelve Codex steps by a competent team: for every process step, reasonably foreseeable hazards are listed with an acceptable end-product level and rated for likelihood and severity; significant hazards not handled by PRPs are classed as CCPs or OPRPs using the decision tree and given effective control measures, with other steps covered by PRPs; CCPs have measurable critical limits and OPRPs measurable or observable action criteria, both validated with records; competent people monitor each CCP and OPRP with set methods, frequency, results and responsibilities, and trained deputies; corrections and corrective actions keep unsafe product from release, find the cause, restore control and prevent recurrence; PRPs, OPRPs and CCPs are verified; HACCP records are kept; and a written hazard control plan lists for each CCP or OPRP the hazard, limit or criteria, monitoring, correction, responsibilities and records, reviewed whenever materials, packaging, process, building or equipment change.
This control maps to 2 controls across 1 other frameworks. If you already hold one of them, the evidence you collected for it is the starting point here rather than new work.
Every mapping shown was judged rather than inferred from wording similarity, and the ones that failed review are published too. See the coverage reports and what was rejected.
The graph holds this control, the 2 it maps to, and the evidence behind each claim, over MCP and REST.
