Leave in advance needs a signed written agreement stating the amount and start date (with a parent or guardian for under 18s), kept as an employee record, with deduction of unaccrued leave allowed on termination. A dental or medical practice shutting down may require annual leave only with 28 days' written notice (or a shorter majority-agreed period), notice to later-engaged affected employees, and reasonable written directions; unpaid leave for undirected parts needs written agreement. Cashing out needs a separate signed agreement for each amount, paying at least what the leave would pay, leaving at least 4 weeks and cashing no more than 2 weeks in 12 months, kept as an employee record without undue influence.
