A category one business engaged in a prescribed activity makes a record substantiating each matter the prescribed provisions of Standard 3.2.2 require for that activity, and keeps each record for 3 months after making it. The prescribed provisions are: receipt of potentially hazardous food at 5°C or below or 60°C or above (5(3)); storage under temperature control (6(2)(a)); use of a process step known to achieve microbiological safety (7(1)(b)(ii)); minimising time at growth temperatures (7(2)); cooling within the two and four hour limits (7(3)); rapid reheating to 60°C or above for hot holding (7(4)); display under temperature control (8(5)(a)); transport under temperature control (10(b)); and cleaning and sanitising of utensils and food contact surfaces (clause 20). A record is not required where the business can demonstrate to the reasonable satisfaction of an authorised officer, on request, that it has complied with each of those provisions (for example by showing the officer the practice).
