A food defence threat assessment identifies potential threats from deliberate sabotage or terrorist-like incidents (2.7.1.1). A documented, implemented and maintained food defence plan based on it meets applicable legislation and includes at least how deliberate adulteration is prevented, by whom and against what criteria; the senior site manager responsible for food defence; controls that let only authorised people into production, storage and equipment areas and near vehicles, and only through designated entry points; protection of sensitive processing points; security at goods-in and in storage for ingredients, raw materials, equipment, packaging and hazardous chemicals; secure storage and transport of materials, labels, inputs, finished product and work in progress; plus recording and control of premises access by staff, contractors and visitors (2.7.1.2). Relevant staff are instructed on the plan (2.7.1.3). The threat assessment and plan are reviewed and tested every year, or sooner if the assessed threat level changes, with records kept (2.7.1.4).
