Adequate potable water from a known clean source is supplied for use as an ingredient and for cleaning premises and equipment, with the source, any on-site storage and the reticulation within the facility identified (11.5.1.1); contingency plans cover a contaminated or unsuitable supply (11.5.1.2); hot and cold water is supplied as needed for effective cleaning (11.5.1.3); delivery within the premises keeps potable water uncontaminated and backflow systems are tested at least annually where possible, with records (11.5.1.4); non-potable water is controlled so there is no cross-connection with potable lines, its pipes and outlets are clearly identified, and hoses, taps and similar outlets are designed to prevent back-siphonage and backflow (11.5.1.5); on-site water storage is built and cleaned on a routine so the water cannot be contaminated (11.5.1.6).
