ISO 22002-2:2025 Prerequisite programmes on food safety, Part 2: Catering 14.6: Personnel cleanliness: hand hygiene in catering

What does 14.6 require?

In addition to the base clause, masks should be used where necessary. Aprons and similar items are neither washed nor dried in areas where food is handled or prepared, and rings are removed or covered while food is handled by hand. Catering staff wash hands thoroughly at each stage of preparation and between handling operations where cross-contamination could occur. Alcohol, gels and gloves can supplement but never replace hygienic hand washing; wearing gloves does not excuse unwashed hands, and torn or punctured gloves are discarded. Chain mail gloves are hard to clean and disinfect and some reprocessed-fibre gloves are unsuitable for food.
