Compressed air and gas systems with direct or indirect contact with food, with food-contact surfaces or with packaging suit the operation and are maintained so they cannot contaminate products. Specifications for their microbiological, chemical and physical quality (solid particles, water and oil) are set where necessary and ideally monitored. Compressor oil is food grade wherever oil could reach the product.
