Construction materials suit the kind of production and the level and type of cleaning it needs, and structures and fittings that could shed contaminants (doors, windows, pipes) are made of cleanable, maintainable materials. The organization designs and keeps floors, walls, doors and other openings, ceilings and the fixtures above them at the hygiene level the operation needs; ceilings and overheads limit accumulation of product residue, foreign matter, dirt or condensate and stop particles falling; external openings keep out foreign matter and pests; floors and joints avoid standing water; drains resist entry of foreign matter and pests and can be cleaned and repaired; temporary structures are placed and built to deny pests shelter and to avoid contamination. Where this cannot be achieved the product is protected another way, and equipment is covered where overhead cleaning is impractical and contaminants could fall.
