BRCGS Global Standard for Food Safety Issue 9 4.15.1: 4.15.1 Risk-based storage procedures for temperature transfer, segregation, off-floor storage and handling

Storage procedures must be based on a risk assessment, understood by staff and put into practice, covering where appropriate: moving chilled and frozen goods between controlled areas; segregation to prevent physical, microbiological, allergen or taint cross-contamination; keeping stock raised from the floor and clear of walls; and handling or stacking so goods are not damaged.
